1/3 cup white or black chia seeds
1 cup fresh almond milk
1 cup coconut cream
1 tsp vanilla extract (sugar free variety) or 1/2 tsp vanilla powder
1 level tbsp Mesquite powder
2 tbsp raw honey
Seasonal fruit to decorate
Optional deliciousness: sprinkle with raw cacao nibs
Mix all ingredients except fruit together well (ensure honey is well mixed through).
Place in the fridge for a couple of hours until chia has expanded.
You can make this one the night before and put in the fridge ready for your breakfast in the morning.
