WARM CAULIFLOWER WITH GREEN OLIVES AND PRESERVED LEMON

This is certainly a different take on cauliflower cheese and much quicker, aromatic and more cross-seasonal than the usual.
4 tbsp olive oil
1 cauliflower, leave removed and broken into florets
1/2 to 1 tsp cumin seeds
1 tbsp preserved lemon dressing or about a 1/4 of a preserved lemon, chopped finely
60g green olives
small pinch of cayenne pepper
sea salt
30g feta cheese

Heat a little less than half the olive oil in a large saute pan. Add the cauliflower florets and saute until evenly browned and softened but still with a little crunch. This will take 8-10 minutes.

Add the cumin seeds and saute for a further 30 seconds or so. Transfer to a bowl and mix with the preserved lemon, olives, cayenne pepper and salt. Despite the feta, the cauliflower can handle a fair amount of salt.

Pour over the remaining olive oil and crumble the feta on top. Serve as soon as you can with any warmed Middle eastern bread.
